These have to be my favorite cookies - ever! There is, however, a somewhat embarrassing story to go along with these yummy cookies............... shhhhhhh, just promise you won't tell anyone else.....
Years ago, we went to spend a week with my mom during summer break. She always did a lot of cooking and baking before we came and this visit was no exception. She had homemade bread, stollen (a German coffee cake), freshly made soup, yummy chili and a double batch of these wonderful cookies, the recipe which she found on the back of a white chocolate chip bag.
Now, while they didn't really look exceptional, one bite had me quite amazed at how delicious they were. Each time I passed through the kitchen, I ever so quietly opened her glass cookie jar and swiped a cookie, one after another.......... Pretty soon that antique cookie jar was empty!..........so sad until I discovered that she had quite a stash in the freezer!............. (which incidentally was much quieter opening and closing than the glass cookie jar, hehe!)
Well, to make a long story short, by the time we were leaving to return home, the delicious white chip cookies were gone, completely wiped out, not a crumb to be found anywhere. As we were leaving and hugging my mom goodbye, I mentioned how much WE had enjoyed our stay and all the yummy food she had prepared especially those fabulous cookies........ oops! You can just imagine my shameful remorse when my family members looked at me like I had robbed the bank......and shared that they had only had one or maybe two of the disappearing cookies....... Oh, and guess what?.......... I was the only one returning home with a back end a bit wider than when we had arrived!
OK, OK - The editor/photographer has a confession too, I let her take the fall for this one, but my hand was in that jar just as much as hers! The only difference was that I wasn't sharp enough to find the freezer "orphan" cookies! :):):)
Oh man! For all these years I've carried this heavy burden of guilt and I'm just finding this out now? .......... well............. YIPEEEE, maybe I'll just make another batch of these cookies to celebrate!
White Chip & Toffee Cookies

Ingredients:
1 ¾ cups flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butter
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons vanilla
1 large egg
1 cup quick-cooking oats
1 bag Bits of Brickle (or Skor) toffee pieces

1/2 cup coconut, shredded
2 cups white chocolate chips (sometimes I use peanut butter chips or butterscotch chips or a combination - also quite delicious!)

Directions:
1. Preheat oven to 375.
2. Stir first 3 ingredients together; set aside.
3. Cream butter and sugar until fluffy.
4. Add vanilla and egg. Beat well.
5. Add dry ingredients to creamed mixture. Mix well
6. Add oats, toffee pieces, coconut and white chips. Mix well.
7. Place heaping tablespoons of dough on ungreased cookie sheet, 2 inches apart. I like to use an ice cream scoop for uniform cookies.
8. Bake 10 to 12 minutes.
9. Remove cookie sheet from oven and place cookies on cooling rack or newspapers covered with a paper towel.

ReplyDeleteI think taking cookies from a cookie jar is totally acceptable. They're put out there for public consumption, right? Finding the stash in the freezer, however...... :)

But I just LOVE that white chocolate and toffee combination in the butter cookie base. Delectable. I totally would have eaten them all too! lol
