This crisp, buttery, one-bowl no-mixer, Ridiculously Easy Rosemary Shortbread is one of those unforgettable recipes you'll be begged to make again and again.

Although we first published this recipe back in 2016, it has a brand new 2020 makeover, so we're sharing it again. It's also got a new name. We used to call this recipe, New York Times Rosemary Shortbread. It's now called Ridiculously Easy Rosemary Shortbread because this new rendition truly is ridiculously easy. Don't worry though, it's just as ridiculously delicious as ever!

The makeover began with a comment I received on Instagram. Someone inquired:

Help, please! I don't have a stand mixer. Is there a way to do it by hand?

A short step back in Café history

That comment got me thinking. I quickly looked up the recipe and realized that it was published back in the day. Back before our Ridiculously Easy series was established, which was the result of a reader survey back in early 2016. "What do you guys want?", I asked in the survey. The overwhelming response was for easy but delicious and gourmet recipes. "Dinner party-worthy recipes that don't take much time". So I changed my culinary mindset and began thinking of recipes to make your life (in the kitchen) easier, more fun and (of course) super delicious.

The super-easy and outrageously delicious recipes, ones that make you look like a culinary rockstar with minimal effort, we dubbed Ridiculously Easy. The rest is history. Although not all of our recipes these days fall into that Ridiculously Easy category, my goal is to come up with delicious recipes that don't take all day, employ lots of equipment or call for crazy ingredients that are difficult to find.

An easier version?

When I looked back at this recipe I saw that it wasn't difficult, but it did call for a mixer or food processor. After putting my Sherlock Holmes hat on for a bit, I realized it would be super easy to convert it to a one-bowl, no-mixer recipe. So I cranked up the oven, pulled out a bowl along with some butter, sugar and flour. Then I raided the herb garden for some fresh rosemary. It took less than 10 minutes to put this recipe together. (You do need to start with soft butter, but we have some quick tips for that in the Café Tips below).

The results? So delicious, actually... ridiculously delicious!

A New York Times recipe

I found this recipe years ago in the food section of the New York Times. The minute I read about it, I knew I'd have to try it. It was an unusual, intriguing combination, and being a huge shortbread sucker, I loved the unique fusion of sweet and savory flavors. When I saw that it was a Melissa Clark (a well-known and popular food writer for the Times) recipe, I was pretty sure it would be wonderful.

Melissa describes the shortbread as "tender, rich, crumbly and irresistible". Me? I'll just call it crazy delicious!

The first time I made it, our son Nick and his wife, Lindsay happened to arrive just as I pulled the pan of golden, sugar-kissed shortbread out of the oven. They were dropping off the kids to spend the night with us and were headed out on a dinner date. Not wanting to spoil their appetites, I offered them a tiny sliver... "Oh my gosh!", "Wow!" "This is unbelievable!" They both requested a second helping ("and not so small, please!"), despite the dinner date. Ever since then, they just roll their eyes when "Rosemary Shortbread" is even mentioned!

So how does the recipe work? So simple! Just combine softened butter with a scoop of sugar. Drizzle in a little honey and stir it all together. Add the flour, salt and fragrant rosemary and stir again until combined. Pop the pan in the oven and 30-40 minutes later you'll be pulling out a pan of golden, fragrant deliciousness.

That's it! Well, you will have to listen to the rave reviews. But that's the fun part!

Café Tips for making this Ridiculously Easy Rosemary Shortbread

  • Because this recipe is now a one-bowl, no-mixer recipe, it's important that your butter is very soft. You can let it sit at room temperature for a few hours or employ one of these tricks:
    • You can soften the butter in the microwave on power level 10%. It works like magic. You'll need to experiment a bit with your microwave though, as they're all different. Start with 1 minute. Add 20 to 30-second increments until you learn how long your microwave will take to get the butter nice and soft, but not melted.
    • Another technique I often use to soften butter is to put it in the microwave for a few hours with the light on. To keep the light on in the microwave I put a folded paper towel in the door.
    • Boil a cup of water in the microwave for 3-4 minutes and get things nice and steamy. Leave the water cup in the microwave, add the butter and close the door. The warmth from the steamy water will help to quickly soften the butter. Sometimes I will even put a kitchen towel or several thicknesses of paper towels in the door so it won't completely close and the light will remain on. The warmth from the light will also help soften the butter.
    • Cutting the butter into small pieces helps it soften quicker.
    • Place the hard butter on a small plate. Fill a bowl with hot water. Wait 5 minutes then discard the water. Put the warm bowl over the butter.
    • Put the butter in the oven with the light turned on. This will take a few hours.
    • The fastest way to soften butter is to put cold butter in the microwave for 10 seconds. Turn it to the opposite side and microwave for another 10 seconds. It might be ready at this point, but if it's not completely soft, add one or two more 5-second stints.
  • There are several pan options for making this shortbread and your choice will determine how thick the final shortbread is. Sometimes I use an 8-inch  baking pan which results in a nice thick shortbread as pictured below. We love it both ways.

  • You can also use a 9-inch pan (resulting in a thinner shortbread as pictured above in the post) or a 10 or 11-inch tart pan with removable sides (resulting in a nice thin shortbread). Experiment and see which you like best! Round or square cake pans will both work.
  • Thicker shortbread will take a little longer to bake.
  • This recipe has been great for getting me out of a pinch, as it makes a delicious dessert in a hurry. Just pick up some good vanilla ice cream (or frozen custard if you have that option). Whip up a batch of this wonderful shortbread and you've got a fabulous dessert with minimal effort. If you want to take it totally over the top, drizzle a bit of this Microwave Caramel Sauce over the ice cream and serve a shortbread wedge on the side. Oh my!
  • I cut the shortbread into 6 wedges for the photoshoot but this can actually serve 8-12 people, especially if you serve it as a side with ice cream.

Ingredients
 
 

  • 1 cup very soft butter
  • cup granulated sugar
  • 2 teaspoons honey
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon finely chopped fresh rosemary
  • 1 teaspoon kosher salt
  • 1-2 tablespoons sanding sugar, Demerara, Turbinado or regular granulated sugar

Instructions
 

  1. Preheat oven to 325. Lightly grease (I use baking spray) and then line an 8 or 9-inch cake pan (round or square) or a tart pan (10 or 11 inches) with a removable bottom with parchment paper. (See Café Tips above in post regarding size of the pan.) Set aside.
  2. Combine soft butter, sugar, honey and vanilla in a medium-large bowl. Stir for about 30 seconds until nice and creamy.
  3. Add the flour, rosemary and salt. Stir just until all of the flour is incorporated. The dough will be crumbly.
  4. Press the dough firmly into the prepared pan to create an even surface. Be sure there are no loose crumbs around the edges of the pan. Sprinkle with the sugar.
  5. Bake for 35-45 minutes then remove from oven. (The smaller your pan is, the thicker your shortbread will be and the longer it will take to bake. Check frequently towards end of baking time. You want it to be a pretty, deep golden brown.)
  6. Invert shortbread onto a flat plate. Place another plate on top and invert again so the sugared side is up.
  7. Slide the shortbread onto a cutting board and sprinkle with a bit more sugar, if desired. Cut it into wedges (or rectangles or squares if using a square pan). Transfer pieces to a wire rack to cool completely. Store in an airtight container.
  8. If you prefer your shortbread even crisper, place the cut pieces on a sheet pan and return return to the oven for 5 minutes then cool on a wire rack.
  9. Garnish when serving with a bit of finely chopped fresh rosemary, if desired.

  2. I have had such fun with this recipe! I made it once exactly as it appears - why mess with perfection, after all. And it was instantly devoured. So that was fine. But then, on some kind of geriatric whim, I made it again last night and fiddled it up: browned the butter (for no better reason than I'm just proud to know how!); rubbed the zest of a lemon, a half tablespoon of lavender buds and some mint leaves into the sugar; and just because there was some left from something else, stirred maybe a half tablespoon of whole thyme leaves along with that tablespoon of rosemary into the dry ingredients. And I have to tell you something: try it! It's just alarmingly delicious! Thanks for the inspiration, Chris!

    1. Hi Meredith, Café recipes are always tested with salted butter. To substitute unsalted butter, add 1/4 tsp of fine salt for every stick of butter, so for this recipe try adding 1/2 tsp for the 1 cup of butter. Hope this turns out well for you!

  9. I made this today but unfortunately it came out kind of greasy. I’m thinking that maybe my butter was too soft to start with. The flavor was good but I didn’t like the texture. It wasn’t dry like normal shortbread.

    1. Hi June, I'm so sorry you had trouble with this recipe. It's difficult to know what went wrong without having been right there in the kitchen with you. The soft butter should not be an issue. I always use short soft butter with all my shortbread as well as other cookie recipes. Again, not sure what went wrong but you might wanna try it one more time. So many others have had great success with this recipe!

  10. I am planning on baking this shortbread recipe today. I have a few questions. Do you cool the shortbread before inverting it onto a plate? Can I use Maple Syrup instead of using honey? Do you think adding some lemon zest would disturb the texture of the dough? I plan to add chopped rosemary into the dough prior to baking. I assume that should be OK? Thank you.

    1. Hi Cori, you don't cool the shortbread before inverting as you want to cut it while it's still fairly hot. Otherwise it will crumble. Yes, maple syrup can be subbed for honey and lemon zest will be delicious! The rosemary is added prior to baking.

I plan to follow your recipes. Once I was at my daughter's at Christmas and we went caroling at Christmas and ended at a home where they served Rosemary Shortbread. I was hooked so happy to find a recipe!!

    1. Followed the recipe exactly expecting a twist on traditional Scottish shortbread and unfortunately despite baking it for 45 minutes I was left with an incredibly dense and overly-buttery disc that certainly wasn't short in texture or reminiscent of crumbly shortbread.

      It's a shame as I have now wasted a nice block of butter on something inedible, much too much butter, much too much grease.

    1. Hi Lisa, we have lots of shortbread recipes that work well with rolling but this one is best made in a pan and cut in wedges.

I have one question - how long will the shortbread keep in an airtight container? I originally made this yesterday (Sunday) as a test run and planned to make it again for company on Thursday night. However my test run came out so well, I'd like to just keep it in an airtight container until Thursday if you think it will stay fresh that long.

Would I individually wrap the wedges before freezing? And do you have any idea if I could just send them frozen and let them defrost on the way?? Or do they need to thaw with no wrapping?

        1. Hi, yes you can freeze the wedges individually and send them out frozen to thaw on the way! You can also freeze the whole circle that has been cut into wedges. Either way works!

  60. Clearly I'm the exception, but this recipe didn't work for me. I used a 9-inch cake pan, and even after 45 minutes, the shortbread was golden but not firm enough to cut. My butter was super soft, and the dough looked great as I put it in the pan. I have an oven thermometer and so know that temperature wasn't an issue either. After the failed attempt, I found Melissa Clark's original recipe and saw that it required pricking the dough with a fork before baking. I'll try that next time.

    1. Hi Laura, so sorry you had difficulty with this. It's hard to say what went wrong without having been right there in the kitchen with you. You're right, so many others have reported good success.
      I've tried it with pricking the dough and without and found it wasn't necessary. Again, I'm sorry you did not have success with this - I hate wasting good ingredients.

I have several decorative shortbread pans and would love to try this easy recipe using one of them. Do you have any specific recommendations? Typically, I use a decorative pan which is 8" square or an octagonal one-- all are made from stoneware or terracotta.

    1. Hi Holly, you could definitely make this the day before. Shortbread will last well in an airtight container for a week or more (if it lasts that long!).

      Regarding your question, I haven't made it with brown butter. If I was going to try it though, I would probably brown the butter and then let it cool till it's the consistency of soft butter, then proceed with the recipe.

    1. Hi Terri, yes that will work fine. You could even roll out the dough and cut out some pretty shapes. If the dough seems crumbly, just add a teaspoon of water and stir well until it comes together.

  116. This was the best pastry I have made EVER!I brought it to a high tea and everyone raved. This is definitely going to be my go to recipie.

  117. Chris, I made this today, used a 9” pan and at 35 minutes the top was brown, so i took it out of the oven. When I tried to transfer it from a flat plate to another and then to cutting board, it crumbled. So I cut it in wedges as best I could and placed it on a sheet pan and put it back in the 325’ oven for another 5 minutes. When I checked it, it was still very soft, so I left it in for another 5 minutes. I have it cooling on a wire rack, but it is very crumbly. It does taste delicious, but is more like a cake that hasn’t baked long enough.
    Can you please suggest what I did wrong so I can correct it next time? I had planned to serve this to my friends tomorrow evening when we play Mah Jongg, but I’ll have to buy something instead. Will look forward to your suggestions.

    1. Hi Paula, I'm really sorry you had trouble with this recipe, especially when you had plans to serve it to guests.
      It's really hard to say what went wrong without having been there in the kitchen with you. I'm wondering if a measurement of something could have been off? It should not be cakelike as there is no leveling agent but crisp and somewhat dense like a good shortbread.
      I've made this recipe so many times and haven't run into anything like this and haven't had any other comments with an issue like this. Again, so sorry, I wish I could be of more help.

Last year, I made it with gluten free flour and it was wonderful. I preferred it thinner and more crisp, but used the thicker version as crumbs for a cheesecake crust with cranberry topping.   149. I was curious about using rosemary in a cookie but after about the fifth time making them, I can say they are addictive! Amazing flavor and very buttery. I always cut them in small pieces to make them last longer but that doesn’t work as we always take at least 2! Just before a hard freeze I pulled the rest of rosemary from the garden and I hope it is enough for a double recipe! Excellent simple recipe.

  176. Hello Chris! We loved this shortbread so much we want to make a batch for our neighbors. Sadly, they are gluten free and I'm not familiar with gluten-free baking. Do you happen to know if I could just substitute almond flour for the regular flour? Also, I'd love to be abe to use your beautiful label. Would you mind sending me the PDF please?

    1. Hi,
      I would not use almond flour if you are trying to make something similar to this type of shortbread (although I'm sure you could make something nice in its own right)... you can make very good shortbread that is gluten free by using a standard gluten free mixed flour from the supermarket, or corn flour. Corn flour is actually quite a traditional flour to use for shortbread. Just look up a recipe and adapt it to combine the elements from this recipe (such as the rosemary).
      If you neighbours are actually Coeliacs, be careful not to allow the biscuits to become contaminated (eg if you're not careful with your sugar and it has bits of flour in it, or your butter with bits of bread in it.. and also some cornflour is not pure- make sure it is gluten free, same goes for baking trays and implements- don't accidentally grease a tin with normal flour!). My parents are Coeliac and would get very sick from even the smallest amount of contamination.

  179. This recipe is amazing! It’s fast, easy, and delicious! I was nervous going into it because this was my first time making shortbread, but it turned out basically perfect! I used an 8x8 pan which was fine, but my oven must have been a little under temperature because even when I baked for the full 45 minutes they were underdone. Not the recipe’s fault, just mine ;). As I’m writing this I’m rehearing my oven to let them sit for another 5 minutes to crisp up after I cut them. They smell beautiful and taste AMAZING even when underdone. I’ll totally be making this again!

    1. I think a little lavender in this shortbread would be amazing, Sandy! If your lavender is not ground, you'll need to grind it a bit. A mortar and pestle works well for this. With the rosemary, I wouldn't just use more than 1 teaspoon of the lavender.

    1. Hi Ann, I think you're probably referring to a springform pan? That will work fine! You'll just have to work a little harder to press the dough into the pan since it's much deeper but it will definitely work!

  263. Hi Chris, I haven't made this shortbread but I have made the brown sugar shortbread. It was wonderful!! This is off the train of thought a little... Would you do a post about your herb garden? I would love to know the foundation of how you started it and a photo.(??) I have rosemary and choices in a pot and hoping to get basil soon.

    2. Julie, thank you for the suggestion! I actually grow a lot of my herbs in a "trug". Because we live in the mountains and are surrounded by forest, we don't get a ton of sunshine so Scott got me what's called a veg trug and placed it near our driveway which is the area that gets the most sunshine.

      He now has a greenhouse cover for it which allows him to start planting herbs and lettuces in early Februrary even though it can get REALLY cold here around that time of year. I do have rosemary plants growing next to the trug in the ground as they are quite hardy.

    1. You could make this in a square pan but I don't think it would work in a loaf pan. It would be difficult to get baked all the way thru and would be hard to cut.

    1. Hi Julie, she hasn't tried this yet. I'm wondering if using half almond flour and half all-purpose gf mix might work.

    1. Yes, you could use dried rosemary but it will better with the fresh! You could even make this shortbread without any rosemary and it will be delicious!

      1. Oh thank God! Precisely the answer I needed. I just ruined a whole package of fresh rosemary by trying to avoid chopping by hand- certain actions hurt too much! I first tried using small chopper- wouldn’t work- maybe not enough volume- put it in the coffee grinder and it became pulverized- so pungent it actually smells bad- when has rosemary ever smelled bad in the history of the world?
        Hope someone finds this helpful and doesn’t try it.
        Should have used scissors.
