Greek Burgers with Tzatziki Sauce


Fire up the grill! ..............
................ cause we've got something delicious for you today! My daughter-in-law, Lindsay mentioned over the weekend that she had made these wonderful Greek burgers. As she described them, I knew that I'd just love them ................. and you will too!


We eat a lot of chicken, shrimp and vegetarian meals around our house. For the most part Nick is thrilled about whatever it is I'm making for dinner. Every now and then he craves red meat and begs me to put it on the menu. After one of his requests for burgers, I started dreaming of a Greek style burger and this is what I came up with. I used extra lean ground beef and whole wheat English muffins to cut back on some calories. The burger is full of spinach and topped with more veggies. It's a burger we can both agree on!......and a delicious combination of some of our favorite flavors. Enjoy! ~ Lindsay


Greek Burgers with Tzatziki Sauce

Ingredients for the tzatziki sauce:
1/2 cup Greek yogurt
2 teaspoons lemon juice
1 garlic clove finely minced
1 teaspoon chopped fresh dill
1/2 cucumber
salt and pepper to taste

Directions for the tzatziki sauce:
1. Shred cucumber with a box grater. Wrap in a towel or paper towels and squeeze to remove as much water as possible.

2. Combine all ingredients in a small bowl and season to taste.

Ingredients for the burgers:
2 teaspoons olive oil
1/2 small onion, chopped
2 cups lightly packed baby spinach, coarsely chopped
1/4 cup crumbled feta cheese
1 tablespoon chopped fresh dill
1/2 tablespoon chopped fresh mint
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1 pound ground beef

Ingredients for serving:
4 whole wheat english muffins or hamburger buns
sliced cucumber
thinly sliced red onion
baby spinach leaves
tomato slices

Directions for the burgers:
1. Heat oil in a small skillet over medium heat. Saute onions until soft. Add spinach and cook until wilted- about 1 minute. Set aside to cool. Once cooled, wrap mixture in a towel or paper towel and squeeze to drain most of the liquid out.

2. Combine feta, herbs, salt, pepper and spinach mixture and ground beef. Form into 4 patties.

3. Grill over medium high heat on a well-oiled grill. Grill for 4 minutes on one side, flip burgers and grill for 3 minutes on the other.

4. Top with tzatziki, cucumber, onion, tomato and spinach. Enjoy!

Lindsay didn't know about this part of the deal, but you're all invited to a cookout at her house featuring.............. yes, you guessed it; fabulous Greek Burgers with Tzatziki Sauce! Don't worry about RVSP-ing, I'll be sure to tell her to make plenty! Oh, and I'll be the one with the bib on................ you know the tzatziki sauce .................! :)

  3. You created this just for me Chris! You know I lived in the Greek part of NYC for 2 years. I miss my favorite little haunts every day.

    I make Greek Salads often but have never thought of a burger with all the trimmings...thanks!
