Have you ever felt a bit FAINT at heart because you so saw something that was so ......... FUN? ..............
................ that's how I felt when I saw these delightfully fun cookies on Pinterest!
Okay, okay, maybe Im exaggerating just a teeny bit but I reallly was quite enchanted the minute I laid eyes on them and knew that it wouldn't be long before these beautiies would be parading out of my oven.
I pinned the recipe and when my husband needed a baby shower treat this week for one of his co-workers (expecting a baby girl!), I knew exactly what to make............
I used my favorite Peanut Butter Kiss cookie recipe from Land O Lakes and tried them two different ways: first with peanut butter as the recipe suggests and then with Biscoff Spread replacing the peanut butter. Though both were delicious, it was a unanimous hands up here at The Café for the Biscoff version - either way you'll be sure to delight family and friends with these fun sweet pink treats!˜
Biscoff Kiss Cookies
Ingredients:
1 cup sugar
½ cup butter, softened
½ cup Biscoff Spread or peanut butter
1 large egg
1 teaspoon vanilla
¼ teaspoon salt
1 ¾ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon pink gel food coloring*, more as needed
½ cup pink sanding sugar*
48 pieces Hershey's Hugs, unwrapped
Directions:
1. Heat oven to 375°F. Combine sugar, butter and Biscoff Spread or peanut butter in large bowl. Beat at medium speed until light and fluffy. Add egg, vanilla and salt; continue beating until well mixed. Add flour and baking soda. Continue beating, scraping bowl often, until well mixed.
2. Add pink gel food coloring and mix well. Add a tiny bit more at a time until desired color is reached.
3. Shape dough into 1-inch balls. (If dough is too soft, refrigerate 30 to 60 minutes.) Roll balls in pink sanding sugar. Place 2 inches apart on ungreased sheet pans.
4. Bake for 8 to 10 minutes or until firm.. Immediately press 1 Hershey's Hug in center of each cookie. Remove from sheet pans; cool completely on wire racks.
Notes:
~ Gel food coloring and sanding sugar in a variety of colors are available from baking supply stores and large craft store like Michaels.
~ I also rolled some of the dough balls in pink and white Nonpareil, available at most larger groceries in the cake decorating section.

My grocery store started carrying the gel food coloring, I had no idea what to do with it as I don't bake. Now I see it makes adorable pink cookies :) These look so good.

ReplyDeleteWhen I first saw this picture, I thought - Valentine's Day, she cannot be thinking Christmas with these. Then, I read your Post. Perfect cookies for a shower. (In blue, for a boy, not so good). Your Biscoff Shortbread Cookies are next on my list to make so will give them a try first. But, these look pretty interesting and are a good way to try out various sugars, etc. before holiday baking. I always forget about Michael's and their Wilton's products.

ReplyDeleteI have looked all over for Biscoff. Do you find it with the peanut butter or in the baking aisle? My Whole Food store didn't even know what I was talking about. Where is everyone finding this?
ReplyDeleteKyle, you can find Biscoff now at Super Walmart in the peanut butter section. A couple of my local grocers have also started carrying it and Trader Joe's has something very similar called "Cookie Spread".

ReplyDeleteCynthia - sorry for the confusion. You do not need brown sugar. I changed my original recipe as the brown sugar made the pink cookies more of a muddy color. Just use regular sugar. Thanks for catching that!
